Turkey Enchilada Casserole

Try this tasty recipe for a quick and easy dinner. (Makes 8-10 servings)

1 1/2 Pounds ground or shredded turkey

1/2 cup onion

1 tbsp garlic

2 tbsps fresh or dried oregano

1/2 tsp cumin

1 tsp olive oil

1 can enchilada sauce ( Or cook your own sauce with water/flour/chicken bouillon/chili powder)

1 tsp salt

12 corn tortillas

2 cups shredded monterray jack cheese

chopped cilantro

1. In 5-6 qt.pan over high heat, stir turkey, onion, garlic, oregano, and cumin on oil until turkey is crumbly and no longer pink, (about 4-5min). Stir in enchilada sauce. Add ingredients to taste.

2.Cut tortillas in half. Arrange a fourth of the tortilla halves evenly over the bottom of casserole (overlap to fit). Sprinkle 1/4 of the cheese evenly over tortillas, then top a third of the meat mixture and a fourth of the sauce. Repeat at least two more layers, then finally top with cheese.

Bake 425′ 18-20 minutes. Sprinkle with chopped cilantro.

– Diced Tomatoes

– Spinach

– 4oz Diced Chicken

Avocado Mayo Recipe

– 1 Avocado

– 1/4 cup fat free mayo

– 1/2 tbsp chopped basil

– 1/8 tsp garlic powder

– 1/2 tbsp lemon juice


1.) Scoop fresh alvocado out from peel and place in blender

2.) Combine mayo, garlic, lemon juice, and basil into blender and blend till smooth

3.) Spread 1-2 tablespoons of alvocado mayo onto flatout bread

4.) Add chicken, spinach, tomatoes, and cheese to desire

10 oz pure water
10 strawberries (Fresh or Frozen)
1 tbs. flax seed oil
1/2 tsp vanilla extract
1 heaping scoop (1 oz) of protein of choice
Stevia to taste (optional)
2-3 ice cubes (optional)
